- In a small pot, bring couscous, half the chicken stock concentrate and 1 cup water to a boil. Cover, reduce heat to low and cook until al dente, 6-8 minutes. Keep covered off heat.
- Pat lamb chops dry and season with ras el hanout, salt and pepper. Heat a drizzle of oil in a large nonstick pan over medium-high heat. Cook lamb to desired doneness, 2-4 minutes per side. Transfer to a plate to rest; wipe out pan.
- In the same pan over medium heat, add mustard, reserved orange juice, remaining stock concentrate and ¼ cup water. Simmer, stirring, until slightly thickened, 1-2 minutes. Remove from heat and stir in 1 tablespoon cold butter until melted. Add a splash of water if too thick.
