Instructions

  1. Preheat oven to 425°F with a baking sheet on the top rack. Dice sweet potatoes into ½-inch pieces (no need to peel). Trim and halve Brussels sprouts. Thinly slice scallions, separating whites from greens. Peel the orange; cut half into segments and juice the other half into a medium bowl.
