Instructions

  1. Preheat oven to 425°F. Wash and dry all produce. Pat duck dry with paper towels and season generously with salt and pepper. Place skin side down in a large nonstick pan.   3. Melt 1 tablespoon butter in a small pot over medium-high heat. Add scallion whites and cook until softened, about 1 minute. Stir in rice and ¾ cup water. Bring to a boil, then cover and reduce heat to low. Cook until tender, 15 minutes. Remove from heat and keep covered.
  4. In a small bowl, stir together cherry jam, chicken demi-glace, chili powder and ¼ cup water. Once duck skin is crisp, flip breasts and pour jam mixture into pan. Add dried cherries. Simmer until sauce thickens and duck reaches desired doneness, about 5 minutes. Transfer duck to a cutting board, leaving sauce in pan. If sauce is too thick, add a splash of water.
  5. Reduce heat to low and stir remaining 1 tablespoon butter into the sauce until melted. Season with salt and pepper. Fluff rice with a fork and stir in pistachios; season with salt and pepper.
  6. Slice duck crosswise. Divide rice among plates, top with duck slices and spoon sauce over duck. Serve with roasted carrots on the side. Garnish with scallion greens.
