Instructions

  1. In a small bowl, combine sour cream and sriracha. Set aside.
  2. Thinly slice radishes and cucumber. In a medium bowl, toss with white wine vinegar, sugar and a pinch of salt. Let pickle while you prepare the beef.
  3. Heat cooking oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it apart, until browned, about 4-5 minutes.
  4. Stir in soy sauce, sesame oil, garlic powder and Korean chili flakes. Cook for 1 minute until fragrant. Remove from heat.
  5. Warm flour tortillas in a dry skillet or microwave.
  6. Assemble tacos: fill each tortilla with beef, pickled veggies, shredded red cabbage and sliced scallions. Drizzle with chili sour cream and garnish with cilantro.

Recipe Tips

For extra heat, add more gochugaru or a dash of sriracha to the beef.

If you prefer corn tortillas, they work well too-just warm them briefly to prevent cracking.

The pickled veggies can be made ahead and stored in the fridge for up to 2 days.

FAQ

Can I use a different protein?

Yes, ground pork or chicken would work well with the same seasoning.

What is gochugaru?

Gochugaru is Korean chili flakes with a smoky, slightly sweet heat. You can substitute with red pepper flakes if needed.

How do I store leftovers?

Store components separately in airtight containers in the fridge for up to 3 days. Reheat beef in a skillet and assemble fresh.
