Instructions

  1. In a small pot, combine jasmine rice, 1¼ cups water and a pinch of salt. Bring to a boil, then cover and reduce heat to low. Simmer until rice is tender, 15-18 minutes. Remove from heat and keep covered until ready to serve.
  2. While rice cooks, wash and dry produce. Trim green beans if needed and cut crosswise into 2-inch pieces. Quarter the lime. Pick cilantro leaves from stems and roughly chop.
  3. Heat a drizzle of oil in a large pan over medium-high heat. Add ground beef, season with salt and pepper and press into an even layer with a spatula. Cook undisturbed until browned on the bottom, 3-4 minutes. Break the meat into pieces and continue cooking until no longer pink, 2-4 minutes more. If there’s excess grease, carefully pour it out.
  4. While beef cooks, place green beans in a medium microwave-safe bowl with a splash of water. Cover with plastic wrap and microwave until tender, 1-2 minutes. Alternatively, steam in a small pot with a splash of water for 5-7 minutes. Drain any excess water.
  5. Add the cooked green beans, sweet Thai chili sauce, 2½ tablespoons sweet soy glaze, 1 tablespoon butter and ½ teaspoon sugar to the pan with the beef. Cook, stirring, until the beef mixture is well coated, 1-2 minutes. Remove from heat and stir in a squeeze of lime juice to taste.
  6. Fluff the cooked rice with a fork and stir in 1 tablespoon butter. Season with salt and pepper. Divide rice between bowls and top with the beef and green bean stir-fry. Sprinkle with crispy fried onions and chopped cilantro. Serve with remaining lime wedges on the side.
