- Whisk in 1 cup water, beef stock concentrate, remaining fry seasoning and remaining thyme. Bring to a simmer, scraping up browned bits. Return meatballs to skillet, reduce heat to low and simmer until meatballs are cooked through and gravy thickens, 5-7 minutes. Season with salt and pepper.
- Mash potatoes with sour cream, remaining 1 tbsp butter and salt to taste. Stir in remaining scallion greens.
