Instructions

  1. Preheat oven to 425°F (220°C). Wash and dry produce. Trim, peel and cut carrots diagonally into ½-inch-thick pieces. Trim and halve zucchini lengthwise, then slice crosswise into 1-inch half-moons.
  2. In a medium bowl, gently combine ground beef, panko, garlic powder, ¾ teaspoon salt (1¼ tsp for 4 servings) and a pinch of pepper. Shape into two 1-inch-tall loaves (four loaves for 4 servings).
  3. Lightly oil a baking sheet. Place meatloaves on one side. Toss carrots on the other side with a drizzle of olive oil, salt and pepper. Roast on top rack until meatloaves are cooked through (internal temp 160°F) and carrots are tender, 22-25 minutes. For extra crispy carrots, remove meatloaves and continue roasting carrots 2-3 minutes more.
  4. Meanwhile, halve, peel and thinly slice onion. Pick parsley leaves and chop. Heat a drizzle of oil in a large nonstick pan over medium-high heat. Add zucchini; cook until softened and lightly browned, 5-7 minutes. Transfer to a plate. Wipe pan clean.
  5. Add another drizzle of oil to the same pan over medium-high heat. Add onion; cook, stirring occasionally, until browned and softened, 6-9 minutes. Lower heat and add a splash of water if browning too quickly.
  6. Add cream cheese, chicken stock concentrate, ½ cup water and ¾ teaspoon sugar (1½ tsp for 4 servings) to the pan. Cook until thickened, 1-3 minutes. Turn off heat; stir in 1 tablespoon butter (2 tbsp for 4) and a pinch of chopped parsley. Season with salt and pepper to taste.
  7. Toss zucchini and carrots together with half the sumac (all for 4 servings). Divide meatloaves and vegetables among plates. Spoon caramelized onion sauce over meatloaves; garnish with remaining parsley. Serve.
