Instructions

  1. Bring a large pot of water to a boil. Add ramen noodles and cook according to package directions until tender. Drain and set aside.
  2. While noodles cook, heat cooking oil in a large pot or Dutch oven over medium-high heat. Add ground pork and cook, breaking it into small pieces, until browned and cooked through, about 4-5 minutes. Season with salt, black pepper and garlic powder.

  4. Pour in the coconut milk, pork ramen stock concentrate, chicken stock concentrate and pho stock concentrate. Add 2 cups of water and bring to a simmer. Cook for 3-4 minutes to allow flavors to meld.
  5. Stir in the cooked ramen noodles. Taste and adjust seasoning with salt, pepper and a pinch of sugar if desired.
  6. Slice the chili pepper thinly (remove seeds for less heat). Cut the lime into wedges.
  7. Ladle the soup into bowls. Garnish with sliced chili pepper and serve with lime wedges on the side for squeezing.
