- Make the sauce: In another small bowl, whisk together 2 tablespoons soy sauce, 1 tablespoon sugar, 1 teaspoon Sriracha, 1 teaspoon sesame oil and the grated ginger. Set aside.
- Cook the vegetables: Heat 2 teaspoons cooking oil in a large nonstick skillet over medium-high heat. Add the snap peas and cook, stirring occasionally, until lightly charred, about 2-3 minutes. Season with salt and pepper. Transfer to a plate. Add another 2 teaspoons oil to the skillet. Add the zucchini and cook until tender and lightly browned, about 3-4 minutes. Season with salt and pepper. Transfer to the plate. Add the remaining 1 teaspoon oil and the carrot ribbons; cook just until wilted, about 1 minute. Season with salt and pepper. Transfer to the plate.
- Fry the egg: In the same skillet, cook the egg sunny-side up over medium heat until whites are set but yolk is still runny, about 2-3 minutes. Season with salt and pepper.
- Assemble the bowls: Divide the cooked rice between two bowls. Arrange the cooked vegetables (snap peas, zucchini, carrot ribbons) and pickled scallions on top. Place the fried egg on one side. Drizzle the sauce over everything. Garnish with the sliced green scallions. Serve immediately, mixing everything together before eating.
