Instructions

  1. Bring ¾ cup water and 1 tablespoon butter to a boil in a small pot. Meanwhile, wash and dry all produce. Pick dill fronds; finely chop a few until you have 1 tablespoon, reserving the rest for garnish. Zest the lemon until you have 1 teaspoon; cut the lemon into wedges. Season the salmon fillets with salt and pepper.
  2. Once the water is boiling, add the couscous and a large pinch of salt to the pot. Cover and set aside off the heat. Heat a large drizzle of vegetable oil in a large nonstick pan over medium-high heat. Place the salmon in the pan skin-side down. Cook until the skin is crisp, 5-6 minutes. Flip and cook to your desired doneness, 2-4 minutes more.
  3. While the salmon cooks, make the sauce: In a small bowl, combine the sour cream, chopped dill, half the lemon zest and a squeeze or two of lemon juice. Season with salt and pepper.
  4. Microwave the green beans in their bag until tender, 2-4 minutes. Transfer to a medium bowl, add 1 tablespoon butter and stir until melted. Season with salt and pepper.
  5. Fluff the couscous with a fork; season with salt and pepper. Stir in the remaining lemon zest and half the za’atar.
  6. Divide the couscous and green beans between plates. Arrange the salmon on top of the couscous. Drizzle the sauce over the salmon, then sprinkle with the remaining za’atar and reserved dill to taste. Serve with the remaining lemon wedges on the side for squeezing.

Recipe Tips

For extra crispy salmon skin, pat the fillets dry before seasoning.

If you don’t have a microwave, steam the green beans in a covered pan with a splash of water for 3-4 minutes.

Adjust the amount of za’atar to your taste-it’s quite aromatic, so start with half and add more if desired.
