Instructions

  1. Cook the rice: In a small pot, combine 3/4 cup jasmine rice with 1 1/2 cups water and a pinch of salt. Bring to a boil, then reduce heat to low, cover and simmer for 15 minutes. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork.

  5. Cook the vegetables: Heat a large nonstick skillet over medium-high heat with a drizzle of oil. Add the mushrooms and cook, stirring occasionally, until browned, about 4 minutes. Add the zucchini and carrot ribbons, season with salt and pepper and cook until tender, about 2 minutes more. Transfer to a plate.
  6. Fry the eggs: In the same skillet, add a little more oil if needed. Crack the eggs into the pan and cook until the whites are set but yolks are still runny, about 2-3 minutes. Season with salt and pepper.
