Add the zucchini and remaining grated ginger and cook until tender, about 2 minutes. Transfer to a plate. In the same skillet, heat 1 teaspoon oil and add the carrot ribbons. Cook until slightly wilted, about 1 minute. Remove from heat.
- Fry the eggs: In the same skillet, heat the remaining 2 teaspoons oil over medium heat. Crack the eggs into the pan and cook until whites are set but yolks are still runny, about 3 minutes. Season with salt and pepper.
- Assemble the bowls: Divide the cooked rice between two bowls. Arrange the mushrooms, zucchini, carrot ribbons and pickled scallions (including any liquid) over the rice. Top each bowl with a fried egg. Drizzle with the sesame-sriracha sauce and garnish with the reserved green scallion slices. Serve immediately, mixing everything together before eating.
