- Heat a drizzle of oil in a large nonstick skillet over medium-high heat. Add salmon and cook until golden brown and cooked through, 4-6 minutes per side. Transfer to a plate; wipe out skillet.
- Return skillet to medium heat with a drizzle of oil. Add minced shallot and cook, stirring, until softened and lightly browned, 2-3 minutes. Stir in ¼ cup water (½ cup for 4 servings) and veggie stock concentrate. Reduce heat to low and simmer until liquid is reduced by half, 2-4 minutes.
- Remove skillet from heat. Stir in crème fraîche, butter and juice from one lemon wedge (two wedges for 4 servings). Season with salt and pepper to taste. Serve salmon over roasted potatoes and broccoli, topped with pan sauce. Garnish with remaining lemon wedges.
