Instructions

  1. In a small pot, combine rice, 1¼ cups water and a pinch of salt. Bring to a boil, then cover and reduce to a low simmer. Cook until rice is tender, 15-18 minutes. Keep covered off heat until ready to serve.
  2. While rice cooks, prepare the vegetables: trim and slice mushrooms, trim and remove strings from snow peas, cut broccoli into small florets and slice scallions into 1-inch pieces.
  3. Pat chicken dry with paper towels. Heat a drizzle of oil in a large pan over medium-high heat. Add chicken and cook, stirring occasionally, until browned and cooked through, 4-6 minutes. Transfer to a plate and wipe out the pan.
  4. Heat another drizzle of oil in the same pan over medium-high heat. Add mushrooms, carrots, snow peas, broccoli and scallions. Cook, stirring occasionally, until vegetables begin to soften, about 2 minutes.
  5. Stir in oyster sauce, sweet soy glaze, ⅓ cup water and 1 tablespoon butter. Cook, stirring frequently, until vegetables are tender and sauce has thickened, 2-4 minutes.
  6. Return chicken to the pan and stir to combine. Taste and season with salt and pepper if desired.
  7. Fluff rice with a fork. Divide rice between bowls, top with stir-fry and sprinkle with crispy fried onions. Serve with sriracha on the side.

For extra crunch, add the crispy fried onions just before serving.

If you prefer more heat, stir some sriracha directly into the stir-fry.
