- Heat a drizzle of oil in a small pot over medium-high heat. Add the ginger and cook, stirring, until fragrant, about 30 seconds. Stir in the rice, 1¼ cups water and a pinch of salt. - Heat a drizzle of oil in the same pan used for the steak over medium-high heat. Add the carrot ribbons and season with salt and pepper. Cook, stirring, until just tender, 3-4 minutes. Transfer to a medium bowl. Add the zucchini and another drizzle of oil to the pan. Cook, stirring, until tender, 5-6 minutes. Season with salt and pepper. Transfer to the bowl with the carrot. Add the mushrooms and another drizzle of oil to the pan. Cook, stirring, until tender, 3-5 minutes. Season with salt and pepper. Turn off heat and transfer to the same bowl.
- Wipe out the pan. Heat a drizzle of oil over medium heat. Crack the egg into the pan and cover. Fry to your preference (about 2-3 minutes for a runny yolk). Season with salt and pepper.
- Thinly slice the steak against the grain. Fluff the rice with a fork and season with salt and pepper. Divide the rice between bowls. Arrange the carrot, zucchini and mushrooms on top. Top each bowl with sliced steak, a fried egg and pickled scallion whites (drained). Drizzle with the sweet sesame sauce and any remaining sriracha to taste. Sprinkle with scallion greens and serve.
