- Bring a large pot of salted water to a boil. Add ramen noodles and cook according to package directions until tender. Drain and set aside.
- While noodles cook, prepare the vegetables. Peel and grate the ginger. Trim and thinly slice the scallions, separating white and green parts. Peel the carrot and cut into thin matchsticks or julienne. Slice the mushrooms.
- In a small bowl, whisk together the sweet soy glaze and Szechuan paste. Set aside.
- Heat a large skillet or wok over medium-high heat with a drizzle of oil. Add the white parts of the scallions, grated ginger, and mushrooms. Stir-fry for 2–3 minutes until mushrooms begin to brown.
- Add the carrot matchsticks and cook for another 1–2 minutes, until slightly tender.
- Add the cooked noodles to the skillet along with the soy glaze mixture. Toss everything together until the noodles are well coated and heated through, about 1 minute. Season with salt and pepper to taste.
- In a separate nonstick skillet, heat a little oil over medium heat. Crack the eggs into the pan and fry until the whites are set but the yolks are still runny, about 2–3 minutes.
- Divide the noodles between bowls. Top each with a fried egg. Garnish with the reserved green scallion tops. Cut the lime into wedges and serve alongside for squeezing over the top.
