Instructions

  1. Bring a large pot of salted water to a boil. Add ramen noodles and cook according to package directions until tender. Drain and set aside.
  2. While noodles cook, prepare the vegetables. Peel and grate the ginger. Trim and thinly slice the scallions, separating white and green parts. Peel the carrot and cut into thin matchsticks or julienne. Slice the mushrooms.
