Instructions

  1. Adjust an oven rack to the top position and preheat the broiler to high. Wash and dry the green pepper. Halve it lengthwise, remove the core and seeds, then slice crosswise into thin strips.

  5. Place a small amount of the beef filling down the center of each tortilla. Roll the tortillas tightly around the filling and place them seam-side down in the cleaned skillet (or a 9×13-inch baking dish if the skillet is not ovenproof). Spoon the remaining salsa verde over the enchiladas and sprinkle evenly with the Mexican cheese blend.
  6. Broil the enchiladas until the cheese is melted and bubbly and the tops are lightly browned, 3-4 minutes. Watch carefully to avoid burning. Drizzle the hot sauce crema over the enchiladas and serve immediately.
