Instructions

  1. Preheat your oven to 425°F (220°C). Bring a pot of salted water to a boil for the potatoes.
  2. Peel and dice the potatoes into 1-inch cubes. Boil until tender, about 15 minutes. Drain and return to the pot.
  3. While potatoes cook, pat the pork tenderloin dry with paper towels. Rub the smoky cinnamon paprika spice blend all over the meat.
