Instructions

  1. Preheat the oven to 400°F. Wash and dry the produce. Trim the Brussels sprouts and halve them lengthwise. Peel the carrot and parsnip, then slice both on the diagonal into 1/4-inch pieces. Strip the thyme leaves from the stems and discard the stems. Halve the lemon.

  5. Meanwhile, heat a drizzle of olive oil in a large pan over medium-high heat. Season the chicken breasts all over with salt and pepper. Add the chicken to the pan and cook for 2 to 3 minutes per side, until browned.
  6. Transfer the browned chicken to a baking sheet. Roast for 5 to 10 minutes, until the juices run clear when pierced with a knife. Let the chicken rest for 5 minutes.
