- Preheat the oven to 425°F with a rack in the top position. Bring 5 cups of water to a boil in a medium pot, then reduce to low heat. Wash and dry all produce. Pick the sage leaves from the stems. - Heat a drizzle of olive oil in a medium ovenproof pan over medium-high heat. Add the wrapped chicken and cook until browned, 2-3 minutes per side. If your pan is not ovenproof, transfer the chicken to a baking sheet. Transfer the pan to the oven and roast until the chicken is cooked through, 15-18 minutes. Remove the chicken to a cutting board to rest.
- While the chicken roasts, heat a drizzle of oil in a large pan over medium heat. Add the shallot and mushrooms; cook, stirring occasionally, until softened and lightly browned, 5-7 minutes. Stir in the garlic and cook until fragrant, 1-2 minutes. Add 1 tablespoon butter, the Arborio rice and a big pinch of salt. Cook, stirring frequently, until the rice is translucent, 1-2 minutes. Add 1 cup of warm water and the stock concentrates; stir until the liquid is mostly absorbed. Continue adding the remaining warm water, ½ cup at a time, stirring until absorbed, until the rice is al dente and creamy, 20-25 minutes.
- Once the risotto is al dente, stir in the cream sauce base, Italian cheese blend, half the grated Parmesan and the juice from one lemon wedge. Cook until slightly thickened, 2-4 minutes. Remove from heat and stir in the truffle seasoning (use less for a subtler taste) and 1 tablespoon butter. The risotto should be loose and saucy; add a splash more water if needed. Season with salt and pepper to taste.
- Roughly chop the remaining sage leaves. Slice the chicken crosswise. Divide the risotto between bowls and top with the remaining Parmesan. Arrange the chicken over the risotto and sprinkle with chopped sage. Serve with the remaining lemon wedges.
