Instructions

  1. Preheat oven to 425°F (220°C). Wash and dry produce. Dice potatoes into ½-inch pieces. Trim, peel and cut carrots diagonally into ½-inch-thick pieces. Trim and thinly slice mushrooms. Peel and mince garlic. Trim and thinly slice scallions, separating whites from greens.
  2. On a baking sheet, toss potatoes with olive oil, salt and pepper on one side. Toss carrots with olive oil, salt and pepper on the other side. Roast on top rack until golden and crispy, 20-25 minutes.
  3. While vegetables roast, heat olive oil and 1 tablespoon butter in a large pan over medium-high heat. Add mushrooms; cook until golden and slightly crisp, 5-7 minutes. Season with salt and pepper. Transfer to a bowl; wipe pan clean.
  4. Pat lamb chops dry; season generously with salt and pepper. Heat oil in the same pan over medium-high heat. Cook lamb to desired doneness, 4-7 minutes per side. Transfer to a cutting board to rest; wipe pan clean.
  5. Heat olive oil and 1 tablespoon butter in the same pan over medium-high heat. Add garlic and scallion whites; cook until fragrant, 30 seconds. Stir in beef stock concentrate and ¼ cup water; bring to a simmer. Add mushrooms and any resting juices from lamb; cook until slightly thickened, 1-2 minutes. Remove from heat; stir in sour cream until smooth. Season with salt and pepper.
  6. Slice lamb chops against the grain. Divide lamb, potatoes and carrots among plates. Spoon sauce over lamb. Garnish with scallion greens.
