Instructions

  1. Preheat oven to 400°F. Cut potatoes into 1-inch chunks. Place in a pot with salted water, bring to a boil and cook until tender, about 15-20 minutes.

  5. For the pickled shallot: Thinly slice shallot. In a small bowl, combine remaining 3 teaspoons red wine vinegar, 1 teaspoon sugar and a pinch of salt. Add shallot and let sit at least 5 minutes.
  6. Drain potatoes and return to pot. Add 2 tablespoons butter and 2 tablespoons sour cream. Mash until smooth. Season with salt and pepper. If desired, stir in 1-2 tablespoons reserved duck fat for extra richness.
  7. For the salad: Zest and segment the orange (reserve zest for garnish). In a bowl, toss arugula with orange segments, pickled shallot (drained) and sliced almonds. Drizzle with olive oil and a squeeze of orange juice if desired. Season with salt and pepper.
