Instructions

  1. Preheat oven to 425°F. Bring a large pot of salted water to a boil. Peel and dice potatoes into 1-inch cubes. Peel and slice carrots into ½-inch thick rounds. Halve and peel the red onion, then cut into ½-inch wedges. Finely chop parsley.
