Instructions

  1. Preheat the oven to 425°F (220°C). Wash and dry all produce. Trim, peel and cut the carrots on a diagonal into ½-inch-thick pieces. Stir in the basmati rice, ¾ cup water (or 1½ cups for 4 servings) and a pinch of salt. Bring to a boil, then cover, reduce the heat to low and simmer until the rice is tender, 15-18 minutes. Remove from heat and keep covered until ready to serve.
  4. Pat the chicken cutlets dry with paper towels. Season both sides evenly with paprika, salt and pepper. Heat a drizzle of olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through, 3-5 minutes per side (internal temperature should reach 165°F). If the chicken browns too quickly, reduce the heat. Transfer the cooked chicken to a plate and wipe out the skillet.
  5. In the same skillet, melt 1 tablespoon of butter over medium heat. Add the chopped thyme and cook until fragrant, about 30 seconds. Stir in the chicken stock concentrate and ¼ cup water (or ⅓ cup for 4 servings). Bring to a simmer, then immediately remove from heat. Stir in the sour cream and a squeeze of lemon juice. Season with pepper to taste.
  6. Fluff the cooked rice with a fork and stir in the lemon zest and pistachios. Season with salt and pepper. Divide the rice, roasted carrots and chicken among plates.
