Instructions

  1. Adjust an oven rack to the top position and preheat to 425°F. Wash and dry all produce. Trim and thinly slice scallions, separating white parts from green tops. Peel and halve the sweet potato lengthwise, then cut crosswise into ¼-inch-thick half-moons. (Tip: For speed, you can skip peeling.) Cut broccoli florets into bite-size pieces if needed. Quarter the lime.
  2. Heat a drizzle of oil in a small pot over medium-high heat. Add the scallion whites and cook until slightly softened, about 1 minute. Stir in the rice, ¾ cup water (1½ cups for 4 servings) and a pinch of salt. Bring to a boil, then cover and reduce heat to low. Simmer until rice is tender, 15-18 minutes. Keep covered off heat until ready to serve.
  3. While rice cooks, place sweet potato on one side of a baking sheet and drizzle with oil, salt and pepper; toss to coat. On the other side, toss broccoli with oil, salt and pepper. Roast on the top rack until veggies are browned and tender, 15-20 minutes. Tip: If broccoli finishes before sweet potato, remove it from the sheet and continue roasting sweet potato.
  4. Meanwhile, in a large bowl, combine the miso sauce concentrate, honey and a generous squeeze of lime juice. In a small bowl, mix mayonnaise with Sriracha to taste. Add water 1 teaspoon at a time until the mixture reaches a drizzling consistency.
  5. When the veggies are almost done, heat a drizzle of oil in a large nonstick pan over medium heat. Crack the eggs into the pan and cover. Fry to your desired doneness. Season with salt and pepper.
  6. Fluff the rice with a fork and season with salt and pepper. Add the roasted broccoli to the bowl with the honey miso dressing and toss to coat. Divide rice between bowls. Top with dressed broccoli and any remaining dressing from the bowl. Add sweet potato and fried eggs. Drizzle with Sriracha mayo and sprinkle with scallion greens. Serve with remaining lime wedges on the side.

Recipe Tips

For speedier prep, skip peeling the sweet potato-just scrub well.

If your broccoli finishes roasting before the sweet potato, remove it from the sheet and let the sweet potato continue roasting.
