- While the vegetables roast, pat the salmon dry with paper towels. Season with the remaining fry seasoning, salt and pepper. Heat a drizzle of olive oil in a large pan over medium-high heat. Place the salmon skin-side down and cook until the skin is browned and crispy, 5-7 minutes. Flip and cook until the salmon is opaque and cooked through, 1-2 minutes more. Transfer the salmon to a plate. Wipe out the pan.
- Return the pan to medium heat. Add the honey Dijon dressing, 2 tablespoons water and a squeeze of lemon juice. Simmer, stirring occasionally, until the sauce thickens, 1-2 minutes. Turn off the heat and stir in 1 tablespoon butter until melted. Season with salt and pepper to taste.
