Ingredients
Instructions
- Wash and dice the potatoes into 1-inch cubes. Peel and slice the carrot into thin rounds. Mince the garlic. Slice the scallions, separating white and green parts. Slice the mushrooms.
- Place the potatoes in a pot with salted water to cover. Bring to a boil and cook until tender, about 15 minutes. Drain and return to the pot.
- While potatoes cook, combine ground beef, dried rosemary, half the scallion whites, ½ teaspoon salt and a pinch of pepper in a bowl. Form into two oval patties.
- Heat 1 teaspoon oil in a large skillet over medium-high heat. Add the patties and cook until browned on both sides and cooked through, about 4-5 minutes per side. Transfer to a plate and cover loosely.
- In the same skillet, add 1 teaspoon oil and the sliced carrots. Cook until golden and tender, about 5-7 minutes. Season with salt and pepper. Remove carrots and set aside.
- Add remaining 1 teaspoon oil and the mushrooms to the skillet. Cook until browned, about 4 minutes. Add the remaining scallion whites and garlic; cook 1 minute. Sprinkle flour over and stir for 1 minute.
- Whisk in ¾ cup water, chicken stock concentrate and beef stock concentrate. Bring to a simmer, scraping up browned bits. Cook until thickened, about 2-3 minutes. Season with salt and pepper. Return patties to the skillet and spoon gravy over.
- Mash the drained potatoes with butter, sour cream and a pinch of salt and pepper. Stir in half the scallion greens. Adjust seasoning.
- Serve the patties and gravy alongside the mashed potatoes and carrots. Garnish with remaining scallion greens.
Recipe Tips
For extra creamy mashed potatoes, warm the butter and sour cream before adding.
Don’t overmix the patties; handle gently for a tender texture.
Let the gravy simmer until it reaches your desired thickness.
