Instructions

  1. Preheat the oven to 425°F. Wash and dry the produce. Set the steak and 1 tablespoon butter out at room temperature while you prep.
  2. Peel the potatoes and cut them into 1/2-inch cubes. Thinly slice the garlic. Finely chop the parsley.
  3. Place the potatoes on a baking sheet. Toss with a drizzle of oil, salt and pepper, then spread into an even layer. Roast until browned and tender, 20 to 25 minutes total; the steak will be added to the same sheet before the potatoes are done.
  4. Heat a drizzle of oil in a large pan over medium-high heat. Pat the steak dry with a paper towel. Sear until browned on the outside, 2 to 3 minutes per side.
  5. Transfer the seared steak to the baking sheet with the potatoes. Roast until cooked to your desired doneness, 5 to 7 minutes. Remove the steak from the sheet and let it rest for 5 minutes.
  6. While the steak rests, heat another drizzle of oil in the same pan over medium heat. Add the green beans and cook, tossing, until tender but still slightly crisp, 4 to 5 minutes.
  7. Add the sliced garlic to the green beans and cook until fragrant, about 30 seconds. Season with salt and pepper.
  8. In a small bowl, stir together the softened butter, Dijon mustard and a pinch of chopped parsley. Season with salt and pepper.
  9. Slice the steak against the grain. Top with the Dijon parsley butter. Serve with the roasted potatoes and garlicky green beans, garnishing with any remaining parsley.

Recipe Tips

Letting the steak sit at room temperature while you prep helps it cook more evenly.

Pat the steak dry before searing so it browns well in the pan.

Add the garlic to the green beans near the end so it becomes fragrant without burning.

Rest the steak for 5 minutes before slicing to help keep it juicy.

Slice the steak against the grain for the most tender bite.
