Instructions

  1. Preheat oven to 425°F. Line a baking sheet with foil and lightly grease with cooking oil.
  2. Cut potatoes into 1-inch chunks. Place in a pot, cover with salted water and bring to a boil. Cook until fork-tender, about 15 minutes.
  3. While potatoes cook, cut broccoli into small florets. Toss with olive oil, salt and pepper. Spread on one side of the prepared baking sheet.
  4. In a shallow bowl, combine panko breadcrumbs, half the cheddar cheese and fry seasoning. In another bowl, mix mayonnaise and remaining cheddar cheese.
  5. Pat chicken cutlets dry and season with salt and pepper. Spread the mayonnaise-cheese mixture over each cutlet, then press into the panko mixture to coat evenly.
  6. Place coated chicken on the other side of the baking sheet with broccoli. Bake for 18-20 minutes, until chicken is golden and cooked through (internal temp 165°F) and broccoli is tender.
  7. While chicken bakes, dice bacon and cook in a skillet over medium heat until crispy. Drain on paper towels.
