Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Cut the potatoes into 1-inch chunks. Place them in a pot with salted water and bring to a boil. Cook until fork-tender, about 15 minutes.

  7. While everything bakes, cook the bacon in a skillet over medium heat until crispy. Transfer to a paper towel-lined plate, then crumble or chop.
