- After the chicken has roasted for 5 minutes, remove the baking sheet from the oven. Toss the asparagus on the empty side of the sheet with a drizzle of olive oil, salt and pepper. (For 4 servings, place the asparagus on a second baking sheet and roast on the middle rack.) Continue roasting until the asparagus is tender and the chicken is cooked through, 10-12 minutes more. For a deeper golden crust, broil the chicken for the last 2-3 minutes.
- Add the sour cream, remaining cheddar and 1 tablespoon of butter (2 tablespoons for 4 servings) to the pot with the drained potatoes. Mash until smooth and creamy, adding splashes of the reserved potato cooking liquid as needed. Stir in half of the chopped bacon and half of the chives. Season with salt and pepper.
- Divide the chicken, mashed potatoes and asparagus among plates. Top the potatoes with the remaining bacon and chives. Serve immediately.
