- Pat the salmon dry with paper towels and season all over with salt and pepper. Heat 1 tablespoon butter and 1 tablespoon olive oil in a large pan over medium-high heat. Add the salmon skin-side down and cook until browned and crisp, 3-4 minutes. Flip and cook until the fish is opaque and cooked through, 3-4 minutes more. Transfer to a paper-towel-lined plate and wipe out the pan.
- Return the pan to medium-high heat. Add ¼ cup water, the juice from half the lemon, the veggie stock concentrate and half the Dijon mustard. Simmer until slightly thickened, 1-2 minutes. Turn off the heat and stir in half the chives, 1 tablespoon butter and the sour cream. If the sauce is too thick, add water 1 teaspoon at a time until drizzling consistency. Season with salt and pepper.
- Divide the salmon, potatoes and zucchini among plates. Drizzle the sauce over the salmon. Garnish with the remaining chives if desired. Serve with the remaining lemon wedges on the side.
