Instructions

  1. Adjust oven racks to top and middle positions and preheat to 450°F. Wash and dry all produce. Dice potatoes into ½-inch pieces. Cut broccoli florets into bite-size pieces if needed. Pick and finely chop the dill fronds.

Stir to combine. Remove from heat and stir in sour cream and 1 tablespoon butter (2 tablespoons for 4 servings), scraping up any browned bits from the bottom. Season with salt and pepper. If the sauce is too thick, add water 1 teaspoon at a time until it reaches a drizzling consistency.
  6. Slice the chicken crosswise. Divide chicken, roasted potatoes and broccoli among plates. Drizzle with the creamy Dijon dill sauce. Garnish with any remaining chopped dill if desired. Serve immediately. (Chicken is fully cooked when internal temperature reaches 165°F.)
