Instructions

  1. Preheat your oven to 400°F (200°C). Peel and dice the potatoes into 1-inch cubes. Peel and grate the carrot. Core and julienne the apple (or cut into thin matchsticks). Thinly slice the scallions, separating white and green parts.
  2. Place the potatoes in a medium pot, cover with cold salted water and bring to a boil. Cook until fork-tender, about 15 minutes. Drain and return to the pot. Mash with a splash of milk or butter (optional) until creamy. Season with salt and pepper to taste. Keep warm.
  3. While potatoes cook, pat the pork tenderloin dry with paper towels. Rub all over with the smoky cinnamon paprika spice blend, ensuring even coating. Season lightly with salt.
  4. Heat a drizzle of oil in an oven-safe skillet over medium-high heat. Sear the pork tenderloin for 2-3 minutes per side until browned. Transfer the skillet to the oven and roast for 12-15 minutes or until the internal temperature reaches 145°F (63°C). Remove from oven and let rest for 5 minutes before slicing.
  5. In a small bowl, whisk together the cherry jam and 2 teaspoons of white wine vinegar to make the cherry sauce. Set aside.
  6. In a medium bowl, combine the grated carrot, julienned apple, sliced scallion whites, mayonnaise and remaining 3 teaspoons of white wine vinegar. Toss well to coat. Season with salt and pepper to taste. Garnish with scallion greens.
  7. Slice the rested pork tenderloin into medallions. Serve alongside the mashed potatoes and apple carrot slaw. Drizzle the cherry sauce over the pork or serve on the side.

Recipe Tips

For extra creamy mashed potatoes, add a tablespoon of butter and a splash of warm milk while mashing.

Let the pork rest after roasting to keep it juicy.

Adjust the sweetness of the cherry sauce by adding more or less vinegar.
