- Place an oven rack in the top position and preheat the oven to 425°F. Lightly oil a baking sheet. Wash and dry the potatoes, asparagus and chives.

- Reserve 1/2 cup of the potato cooking liquid, then drain the potatoes and return them to the pot.
- Add the sour cream, remaining cheddar and remaining 1 tablespoon butter to the potatoes. Mash until smooth and creamy, adding splashes of the reserved potato cooking liquid as needed.
- Stir half the chopped bacon and half the chives into the mashed potatoes. Season with salt and pepper.
- Divide the cheddar panko chicken, mashed potatoes and roasted asparagus between plates. Top the potatoes with the remaining bacon and chives, then serve.
