Instructions

  1. Wash and dry all produce. Adjust the oven rack so it is closest to the broiler flame and place a baking sheet on the rack. Preheat the broiler to high. Core and dice the tomato. Thinly slice the scallions, separating the white parts from the green tops. Tear the pulled pork into bite-size pieces.
  2. In a large pan over medium-high heat, melt the butter with 1 tablespoon of olive oil. Stir in the BBQ seasoning and cook until fragrant, about 30 seconds.
  3. Add the pulled pork and 1/4 cup water to the pan, stirring to coat. Cook, stirring occasionally, until the pork is warmed through and the water has mostly evaporated but the mixture is still slightly saucy, 2-3 minutes. Season with salt and pepper to taste.

Transfer the flatbreads to the baking sheet and drizzle each with a generous amount of olive oil.
  5. Return the baking sheet to the broiler and broil until the cheese melts and the flatbreads are golden brown and crisp, 3-4 minutes. Watch closely to prevent burning.
