Instructions

  1. Preheat oven to 425°F. Line a baking sheet with foil and lightly oil.
  2. Thinly slice potatoes into rounds (about 1/8-inch thick). Toss with 2 tsp oil, salt and pepper. Arrange in overlapping rows on one side of the baking sheet.
  3. Trim green beans and toss with 1 tsp oil, salt and pepper. Place on the other side of the baking sheet.
  4. In a bowl, combine ground beef, panko, half the BBQ seasoning, chili powder, minced garlic and chopped scallions (reserve some for crema). Mix gently and form into two oval loaves. Place on the baking sheet among the potatoes and green beans.
  5. Brush meatloaves with 2 tbsp BBQ sauce. Roast for 20-25 minutes, until meatloaves are cooked through and potatoes are tender.
  6. Meanwhile, make scallion crema: mix sour cream with remaining chopped scallions and a pinch of salt. Set aside.
  7. Remove from oven. Brush meatloaves with remaining BBQ sauce. Serve with potatoes and green beans, drizzled with scallion crema.
