Instructions

  1. Preheat oven to 450°F (230°C) and adjust rack to middle position. Wash and dry all produce. Mince the garlic. Chop the parsley. Halve and peel the onion. Using the large holes of a box grater, grate half the onion into a large bowl. In a small bowl, combine 1 tablespoon balsamic vinegar and the ketchup to make the glaze.
  2. Add the minced garlic, chopped parsley, panko breadcrumbs, ground beef, and ¾ teaspoon salt to the bowl with the grated onion. Season with pepper. Mix with your hands until just combined. Shape the mixture into two 1-inch-thick loaves. Place on a lightly oiled baking sheet. Brush the tops with the balsamic ketchup glaze. Bake on the middle rack for 25 minutes, or until cooked through.
  3. While the meatloaves bake, peel and dice the sweet potatoes into ½-inch pieces. Place them in a medium pot, add a pinch of salt, and cover with water by 2 inches. Bring to a boil and cook until tender, about 10 minutes. Drain and return to the pot.
  4. After the meatloaves have baked for 10 minutes, remove the baking sheet from the oven. Toss the green beans on the same sheet with a drizzle of olive oil, salt, and pepper. Return to the oven and roast until the meatloaves are cooked through and the green beans are tender and slightly crisped, about 15 more minutes.
  5. Mash the sweet potatoes in the pot with a potato masher or fork until mostly smooth. Add the butter and honey, and continue mashing until combined and the butter is melted. Season generously with salt and pepper.
  6. Once the meatloaves and green beans are done, sprinkle the almonds over the green beans and toss to combine. Divide the meatloaves between plates and serve with the sweet potato mash and green beans on the side.
