- On a separate baking sheet, toss the green beans with a drizzle of olive oil, salt and pepper. Roast in the oven until slightly crispy, about 12 minutes.
- Meanwhile, halve and peel the shallot, then mince it finely.
- Heat a large drizzle of olive oil in a large skillet over medium-high heat. Pat the chicken breasts dry with paper towels and season all over with salt and pepper. Add to the skillet and cook until no longer pink in the center, 4-5 minutes per side. Transfer the chicken to a plate and let rest.
- Reduce the heat to medium. Add the minced shallot, thyme sprigs and a drizzle of olive oil to the same skillet. Cook, stirring, until the shallot is soft, 2-3 minutes. Stir in the balsamic vinegar and apricot jam; let simmer until syrupy, about 1 minute. Add ½ cup water and the chicken stock concentrate, stirring to combine. Simmer until the sauce thickens, about 3 minutes. Remove the skillet from the heat, add the butter and stir or swirl until melted.
- Discard the thyme sprigs from the sauce. Season the sauce with salt and pepper to taste. Thinly slice the chicken. Divide the chicken, roasted green beans and fingerling potatoes among plates. Drizzle the apricot sauce over the chicken and serve immediately.
