- Mash potatoes with 2 tablespoons butter (3 for 4) until smooth, adding splashes of reserved potato cooking liquid as needed. Chop bacon into bite-size pieces; stir half into the mashed potatoes. Season with salt and pepper. Sprinkle asparagus with lemon zest to taste. Divide potatoes, asparagus and chicken among plates.
