Instructions

  1. Preheat your oven to 400°F (200°C). Bring a pot of salted water to a boil.
  2. Peel and dice the potatoes into 1-inch cubes. Boil until fork-tender, about 15 minutes. Drain and return to the pot.
  3. While potatoes cook, pat the pork tenderloin dry with paper towels. Season generously with salt and pepper, then rub the Smoky Cinnamon Paprika Spice all over the meat.
  4. Heat a drizzle of oil in an oven-safe skillet over medium-high heat. Sear the pork until browned on all sides, about 2-3 minutes per side.

  6. Meanwhile, mash the boiled potatoes with sour cream, salt and pepper until smooth and creamy. Cover to keep warm.
  7. In a small bowl, whisk together the cherry jam and 1 tablespoon of water to create a sauce. Set aside.
  8. For the slaw: Core and julienne the apple (or cut into thin matchsticks). Thinly slice the scallions. In a bowl, combine the apple, shredded carrots, scallions, white wine vinegar, mayonnaise and a pinch of salt and pepper. Toss well.
  9. Slice the rested pork tenderloin into medallions. Serve alongside the mashed potatoes and slaw. Drizzle the cherry sauce over the pork.
