Instructions

  1. Preheat oven to 425°F (220°C) with a rack in the top position. Wash and dry all produce. Trim and halve mushrooms (quarter any large ones). Zest the lime and cut it into wedges. In a small bowl, combine mayonnaise, sweet Thai chili sauce and a squeeze of lime juice to taste; set aside.
  2. In a small pot, combine rice, 1¼ cups water and a big pinch of salt. Bring to a boil, then cover and reduce heat to low. Simmer until rice is tender, 15-18 minutes. Remove from heat and keep covered until ready to serve.
  3. While rice cooks, in a medium bowl, whisk together tempura mix, 1/3 cup cold water, fry seasoning and ½ tsp salt until smooth. The batter should be the consistency of pancake batter; if too thick, add more water 1 tablespoon at a time. Stir mushrooms into batter until fully coated.
  4. On a baking sheet, toss green beans with a drizzle of oil, salt and pepper. Roast until browned and tender, 12-15 minutes.
  5. Meanwhile, heat about 1/3 inch of oil in a large pan over medium-high heat. When a drop of batter sizzles on contact, use tongs to add coated mushrooms in a single layer (work in batches if needed). Cook until golden brown, 3-4 minutes per side. Transfer to a paper-towel-lined plate and season with salt.
  6. Fluff rice with a fork, then stir in lime zest and 1 tablespoon butter. Season with salt and pepper. Divide rice among bowls, top with mushrooms and green beans and drizzle with dynamite sauce. Serve with remaining lime wedges on the side.

For extra crispy tempura, make sure the batter is ice-cold and the oil is hot enough (350°F/175°C).
