Instructions

  1. Preheat your oven to 425°F. Cut the broccoli into small florets, toss with a drizzle of oil, salt and pepper and spread on a baking sheet. Roast for 15-18 minutes until tender and lightly browned.
  2. While the broccoli roasts, rinse the jasmine rice under cold water until the water runs clear. In a small pot, combine the rice with 1 cup of water and a pinch of salt. Bring to a boil, then reduce heat to low, cover and simmer for 15 minutes. Remove from heat and let stand covered for 5 minutes.
