Cook until browned and no longer pink in the center, 3 to 4 minutes per side. Transfer to a plate and let rest for 5 minutes. Cover loosely with foil if you want to keep it warm.
- While the chicken rests, add the drained potatoes to the same pan with the chopped rosemary, minced shallot, remaining garlic and another drizzle of olive oil.
