  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.

  5. While the couscous cooks, pat the chicken cutlets dry with paper towels and season both sides with salt and pepper. In a large skillet, heat 1 tablespoon butter over medium-high heat. Add the chicken and cook until golden brown and cooked through, about 3-4 minutes per side. Transfer to a plate and tent with foil.
  6. Reduce the heat to medium. Add the remaining 1 tablespoon butter to the skillet. Add the white parts of the scallions and the minced garlic; cook for 30 seconds until fragrant.
