Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Wash and dice the potatoes into 1-inch cubes. Peel and slice the carrots into 1/2-inch thick rounds. Trim and thinly slice the scallions, separating white and green parts.
