Instructions

  1. Preheat your oven to 425°F (220°C). Wash and cut the potatoes into 1-inch chunks. Peel and cut the carrots into 1/2-inch thick rounds. Toss the potatoes and carrots with olive oil, salt and pepper. Spread them in a single layer on a baking sheet. Roast for 25-30 minutes, until golden and tender, flipping halfway through.
  2. While the vegetables roast, pat the ranch steak dry with paper towels and season generously with salt and pepper on both sides. Let it come to room temperature for about 10 minutes.
  3. Heat a large skillet over medium-high heat and add the cooking oil. Once shimmering, carefully place the steak in the pan. Cook for 4-5 minutes per side for medium-rare or until your desired doneness. Transfer the steak to a cutting board and let it rest for 5 minutes.
  4. Reduce the heat to medium. In the same skillet, add the butter. Once melted, add the minced garlic and cook for 30 seconds until fragrant. Stir in the beef stock concentrate and 1/4 cup of water, scraping up any browned bits from the bottom of the pan. Let it simmer for 1 minute.
  5. Remove the skillet from heat and stir in the sour cream and fresh thyme leaves (stripped from stems). Season with salt and pepper to taste. Slice the steak against the grain.
  6. Serve the sliced steak with the roasted potatoes and carrots. Spoon the creamy thyme sauce over the steak. Garnish with sliced scallions.

Recipe Tips

For the best sear, make sure the steak is dry before seasoning and the pan is hot before adding the meat.

Let the steak rest after cooking to keep it juicy. Slice against the grain for maximum tenderness.

If you prefer a thicker sauce, let it simmer a minute longer to reduce slightly before adding the sour cream.
