Panko-Crusted Tilapia with Roasted Asparagus and Lemon-Chive Sour Cream

Side Dish20 min817 cal / serving

This panko-crusted tilapia is a simple stovetop fish dinner with plenty of crunch and a bright, creamy finish. Sour cream, lemon and chives do double duty: part of the mixture helps the breadcrumbs cling to the fish, while the rest becomes a tangy sauce for serving.

Roasted asparagus and chive-buttered ciabatta toasts round out the plate, making this an easy, satisfying meal with crisp textures and fresh flavor.

Instructions

  1. Preheat the oven to 450°F. Wash and dry the produce. Trim and discard the woody ends from the asparagus. Halve the lemon, cut one half into wedges and finely chop the chives.
  2. In a small bowl, stir together the sour cream, 1 tablespoon chopped chives and a squeeze of lemon juice. Season with salt, pepper and additional lemon juice to taste. Divide the sauce in half: one portion will coat the fish and the other will be used for serving.
  3. Place the asparagus on a baking sheet and toss with a drizzle of vegetable oil. Season with salt and pepper. Roast until tender and lightly crisped, 10 to 12 minutes.
  4. While the asparagus roasts, add the panko breadcrumbs to a shallow dish or plate. Season the panko with salt and pepper.
  5. Pat the tilapia dry with paper towels, then season all over with salt and pepper. Brush the fillets with the reserved portion of sauce for coating. Press each fillet into the seasoned panko, turning to coat all sides and gently pressing so the crumbs adhere.
  6. Heat a large drizzle of vegetable oil in a large pan over medium-high heat. Add the coated tilapia and cook until the crust is golden brown and the fish is opaque, 4 to 6 minutes per side. If the crumbs darken too quickly, reduce the heat.
  7. While the fish cooks, place the butter and 1 tablespoon chopped chives in a small microwave-safe bowl. Microwave until melted, about 30 seconds.
  8. Split the ciabatta breads in half. Brush the cut sides with the chive butter, then season with salt and pepper. Place on another baking sheet or on the asparagus sheet if there is room and toast in the oven until golden brown, about 5 minutes.
  9. Cut the ciabatta toasts into triangles. Divide the tilapia, roasted asparagus and toasts between plates. Drizzle the fish with the remaining lemon-chive sour cream sauce and serve with lemon wedges on the side.

Recipe Tips

Patting the tilapia dry helps the sour cream mixture and panko coating cling more evenly.

Keep an eye on the skillet heat; panko browns quickly, so lower the heat if the crust gets dark before the fish is opaque.

Use one half of the sauce strictly for brushing the raw fish and keep the remaining half separate for serving.

If your baking sheet has enough room, the ciabatta can toast alongside the asparagus.

FAQ

How do I know when the tilapia is done?

The tilapia is ready when the flesh turns opaque and the panko crust is golden brown, which should take 4 to 6 minutes per side over medium-high heat.

Why is the sour cream sauce divided?

Half of the sauce is brushed onto the fish to help the panko stick, while the other half stays clean and is served over the finished tilapia.

Can the asparagus and ciabatta bake on the same pan?

Yes, if there is enough space on the baking sheet. The asparagus roasts for 10 to 12 minutes and the ciabatta needs about 5 minutes to toast.

What should I do if the panko browns too fast?

Reduce the heat under the pan so the fish has time to cook through while the crust stays golden rather than overly dark.
