- Meanwhile, microwave 1 tablespoon butter in a small bowl until melted, 30-60 seconds. Stir in remaining roasted onion & garlic spread and ketchup. After meatloaves have roasted 16 minutes, spoon glaze over tops. Return to top rack until cooked through and glaze is tacky, 2-4 minutes more.
- Add sour cream and remaining 1 tablespoon butter to potatoes. Mash until smooth, adding reserved cooking liquid as needed. Season with salt and pepper.
- Divide meatloaves, mashed potatoes and roasted broccoli among plates. Sprinkle with remaining parsley and serve.
