Instructions

  1. Preheat oven to 425°F. Wash and dry all produce. Halve the baby potatoes. Trim the green beans. Zest and halve the lemons. Peel and core the apples, then dice into small cubes.
  2. On a baking sheet, toss the potatoes with a drizzle of olive oil and a pinch of salt and pepper. Roast until golden brown, 20-25 minutes.
  3. Meanwhile, heat a drizzle of oil in a large pan over medium-high heat. Season the pork tenderloin on all sides with salt and pepper. Sear until browned, 3-4 minutes per side. Transfer the pork to another baking sheet.
  4. On the same baking sheet as the pork, toss the green beans with a drizzle of oil and a pinch of salt and pepper. Roast until the pork reaches desired doneness and the green beans are tender, about 15 minutes. Let the pork rest for a few minutes before slicing.
  5. While the pork roasts, melt the butter in a medium pot over medium heat. Add the diced apples and sugar, tossing to coat. Squeeze in the juice of half a lemon. Season with the applesauce spice blend and a pinch of salt. Add enough water to reach halfway up the apples. Bring to a boil, then reduce heat and simmer until the apples are soft, about 15 minutes.
  6. Mash the apples with a fork or potato masher until smooth. Taste and adjust seasoning with salt and lemon juice as needed.
  7. Finely chop the parsley. Toss the roasted green beans with lemon zest and a squeeze of lemon juice to taste. Slice the rested pork. Serve the pork with the green beans, roasted potatoes and a generous spoonful of applesauce. Garnish with chopped parsley.

Recipe Tips

For the best sear, pat the pork dry with paper towels before seasoning.

Let the pork rest for at least 5 minutes after roasting to keep it juicy.

Adjust the sweetness of the applesauce by adding more or less sugar to taste.

FAQ

Can I use pork chops instead of tenderloin?

Yes, boneless pork chops work well. Adjust cooking time as needed; they may cook faster than a whole tenderloin.

What can I substitute for the applesauce spice blend?

Mix 1 teaspoon cinnamon, 1/2 teaspoon nutmeg and 1/4 teaspoon allspice as a substitute.

How do I store leftovers?

Store in an airtight container in the refrigerator for up to 3 days. Reheat gently in the microwave or oven.
